Ingredients
  • 250 g ground pork
  • 35 g garlic chives, chopped
  • ⅞ tsp white pepper
  • 2 tsp cornstarch
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1 cup mini tapioca pearls
  • Handful soybean sprouts
  • Dark soy sauce
  • Chili oil
Method
  1. 1In a medium bowl, combine ground pork, white pepper, cornstarch, chopped garlic chives, oyster sauce, and sugar.
  2. 2Mix the pork filling thoroughly with two spoons until all ingredients are well incorporated and uniform.
  3. 3Place mini tapioca pearls in a separate bowl and pour enough cold water to cover them.
  4. 4Soak the tapioca pearls for 5 minutes, then drain them using a fine-mesh sieve.
  5. 5Using two spoons, scoop out small portions of the pork filling and gently form them into small, spherical meatballs.
  6. 6Place each meatball into the bowl of drained tapioca pearls and roll it around using chopsticks until its entire surface is coated.
  7. 7Arrange the pearl-coated dumplings on a bed of soybean sprouts inside a bamboo steamer basket.
  8. 8Place the lid on the steamer and steam on high heat for 15 minutes.
  9. 9Serve the cooked dumplings hot directly from the bamboo steamer basket.
  10. 10Drizzle dark soy sauce and chili oil over the finished dumplings before eating.
