Ingredients
- 250 g ground pork
- 35 g garlic chives, chopped
- ⅞ tsp white pepper
- 2 tsp cornstarch
- 1 tbsp oyster sauce
- 1 tsp sugar
- 1 cup mini tapioca pearls
- Handful soybean sprouts
- Dark soy sauce
- Chili oil
Method
- 1In a medium bowl, combine ground pork, white pepper, cornstarch, chopped garlic chives, oyster sauce, and sugar.
- 2Mix the pork filling thoroughly with two spoons until all ingredients are well incorporated and uniform.
- 3Place mini tapioca pearls in a separate bowl and pour enough cold water to cover them.
- 4Soak the tapioca pearls for 5 minutes, then drain them using a fine-mesh sieve.
- 5Using two spoons, scoop out small portions of the pork filling and gently form them into small, spherical meatballs.
- 6Place each meatball into the bowl of drained tapioca pearls and roll it around using chopsticks until its entire surface is coated.
- 7Arrange the pearl-coated dumplings on a bed of soybean sprouts inside a bamboo steamer basket.
- 8Place the lid on the steamer and steam on high heat for 15 minutes.
- 9Serve the cooked dumplings hot directly from the bamboo steamer basket.
- 10Drizzle dark soy sauce and chili oil over the finished dumplings before eating.
