Ingredients
- 120 ml lukewarm milk
- 2 tsps vinegar
- 100 g ghee
- 100 g caster sugar
- 1 tsp vanilla extract
- 160 g all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- A generous amount of ghee for brushing
Method
- 1Pour lukewarm milk into a mixing bowl.
- 2Add 2 teaspoons of vinegar to the milk and whisk briefly to create a buttermilk substitute.
- 3Pour 100g of caster sugar into the milk-vinegar mixture and whisk until combined.
- 4Add 1 teaspoon of vanilla extract to the mixture.
- 5Add 100g of melted ghee to the mixture and thoroughly whisk until smooth.
- 6Sift all-purpose flour, baking powder, baking soda, and salt into the wet mixture.
- 7Whisk the dry and wet ingredients together by hand until a thick, pale yellow batter forms.
- 8Pour the batter into a metal loaf pan lined with parchment paper and spread evenly.
- 9Bake the cake at 170°C for 40 minutes or until completely baked.
- 10Generously brush the top and sides of the warm baked cake with melted ghee.
- 11Slice the finished ghee cake into thick pieces and serve.
