Ingredients
  • 120 ml lukewarm milk
  • 2 tsps vinegar
  • 100 g ghee
  • 100 g caster sugar
  • 1 tsp vanilla extract
  • 160 g all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • A generous amount of ghee for brushing
Method
  1. 1Pour lukewarm milk into a mixing bowl.
  2. 2Add 2 teaspoons of vinegar to the milk and whisk briefly to create a buttermilk substitute.
  3. 3Pour 100g of caster sugar into the milk-vinegar mixture and whisk until combined.
  4. 4Add 1 teaspoon of vanilla extract to the mixture.
  5. 5Add 100g of melted ghee to the mixture and thoroughly whisk until smooth.
  6. 6Sift all-purpose flour, baking powder, baking soda, and salt into the wet mixture.
  7. 7Whisk the dry and wet ingredients together by hand until a thick, pale yellow batter forms.
  8. 8Pour the batter into a metal loaf pan lined with parchment paper and spread evenly.
  9. 9Bake the cake at 170°C for 40 minutes or until completely baked.
  10. 10Generously brush the top and sides of the warm baked cake with melted ghee.
  11. 11Slice the finished ghee cake into thick pieces and serve.
