- 50 g softened butter
- 8 g minced garlic
- 1 g dried parsley
- 1 g salt
- 285 g bread flour
- 20 g sugar
- 3 g yeast
- 2 g salt
- 120 g cold water
- 60 g cold milk
- 18 g softened butter
- 8 sausages
- 75 g grated cheese
- Additional dried parsley for garnish
Method
- 1Combine 50g softened butter, 8g minced garlic, 1g dried parsley, and 1g salt in a ramekin until well mixed and creamy to make the garlic spread.
- 2Add bread flour, 20g sugar, 2g salt, and 3g yeast to a stand mixer bowl and briefly stir with a spatula.
- 3Pour 60g cold milk and 120g cold water into the dry ingredients and knead in the stand mixer with a dough hook until a rough dough forms.
- 4Add 18g softened butter to the dough and continue kneading until the dough is smooth and elastic.
- 5Transfer the dough to a clear glass bowl, gently press it down, cover it, and allow it to rise until doubled in size for the first proof.
- 6Punch down the risen dough in the center with a fist to release gases, then gently stretch and fold it a few times.
- 7Place the dough on a lightly floured surface, flatten it, and divide it into 8 equal portions, then round each portion into a small ball by hand.
- 8Roll each dough ball into a long, thin rope (approximately 11-14 cm long), wrap it spirally around a sausage leaving both ends exposed, and pinch the dough ends to seal.
- 9Place the wrapped sausage rolls on a silicone baking mat on a baking tray and generously brush each roll with the prepared garlic butter mixture.
- 10Cover the tray with aluminum foil and allow the rolls to undergo a second proof.
- 11Spread grated cheese on a clean metal surface and roll each garlic butter-brushed sausage roll in the cheese until it is evenly coated.
- 12Bake the tray, initially covered with aluminum foil, in the oven, then remove the foil and bake further until the rolls are golden brown.
- 13Once baked, remove the hot rolls from the oven, brush more garlic butter over them, and sprinkle additional dried parsley on top for garnish.
