Ingredients
  • 4-6 cloves garlic
  • 1 bunch Chinese broccoli (gai lan)
  • 2 tbsp oyster sauce
  • 1 tsp black pepper
  • 1 tbsp cooking oil
Method
  1. 1Heat cooking oil in a large wok on an induction stovetop.
  2. 2Pound or smash garlic in a mortar and pestle.
  3. 3Add smashed garlic to hot oil and stir-fry with a wooden spatula until fragrant and lightly golden.
  4. 4Add pre-cut, diagonally sliced gai lan stems to the wok and sauté briefly.
  5. 5Add roughly chopped gai lan leaves to the wok.
  6. 6Pour a generous stream of oyster sauce directly over the cooking vegetables.
  7. 7Grind several cranks of black pepper over the vegetables.
  8. 8Vigorously stir-fry with the wooden spatula until well combined, coated in sauce, and leaves are wilted but tender-crisp.
  9. 9Immediately scoop the stir-fry from the wok into a serving bowl.
