Ingredients
- 4-6 cloves garlic
- 1 bunch Chinese broccoli (gai lan)
- 2 tbsp oyster sauce
- 1 tsp black pepper
- 1 tbsp cooking oil
Method
- 1Heat cooking oil in a large wok on an induction stovetop.
- 2Pound or smash garlic in a mortar and pestle.
- 3Add smashed garlic to hot oil and stir-fry with a wooden spatula until fragrant and lightly golden.
- 4Add pre-cut, diagonally sliced gai lan stems to the wok and sauté briefly.
- 5Add roughly chopped gai lan leaves to the wok.
- 6Pour a generous stream of oyster sauce directly over the cooking vegetables.
- 7Grind several cranks of black pepper over the vegetables.
- 8Vigorously stir-fry with the wooden spatula until well combined, coated in sauce, and leaves are wilted but tender-crisp.
- 9Immediately scoop the stir-fry from the wok into a serving bowl.
