- 1 large chicken breast
- 1 cup all-purpose flour
- 2-3 whisked eggs
- 2-3 cups panko breadcrumbs
- 1-2 tablespoons olive oil
- 2 cups cherry tomatoes on the vine
- Salt
- 2-3 tablespoons Trader Joe's Traditional Tunisian Harissa
- 2-3 cloves garlic, sliced
- 1/2 cup cream or milk
- 1-2 cups fresh basil leaves
- 1/2 cup grated Parmesan cheese
- Olive oil (for pesto)
- 4-6 thin slices mortadella
- 1 ball fresh burrata cheese
- 1 long baguette or sub roll
- Handful of chopped pistachios
- Drizzle of olive oil
Method
- 1Pound chicken breast thin, season with salt.
- 2Dredge chicken in flour, dip in egg wash, then coat generously in panko breadcrumbs.
- 3Deep-fry breaded chicken in hot oil in a Dutch oven until golden and crispy.
- 4Prepare spicy tomato cream sauce: sauté cherry tomatoes with olive oil and salt until burst.
- 5Stir in harissa paste and sliced garlic, then add cream and simmer. Blend mixture.
- 6Prepare pesto: blend fresh basil, Parmesan cheese, and olive oil.
- 7Slice baguette lengthwise.
- 8Assemble sandwich: spread pesto on bread, layer with fried chicken, mortadella, burrata, and spicy tomato cream sauce.
- 9Garnish with chopped pistachios and a drizzle of olive oil.
