  • 100g Cheese (for filling)
  • 50g Butter
  • 10 Fresh Sage Leaves
  • 1 tsp Salt

  • 30g Grated Cheese (for topping)
Method
  1. 1Blanch, finely chop, and squeeze excess liquid from spinach.
  2. 2Combine squeezed spinach with cheese for filling.
  3. 3Fill and shape fresh pasta dough into tortelli.
  4. 4Boil tortelli in salted water until cooked.
  5. 5In a pan, brown butter with fresh sage leaves.
  6. 6Sauté boiled tortelli in the sage butter sauce until golden and crisp.
  7. 7Serve immediately, garnished with grated cheese, salt, and black pepper.
