- 6 golgappe
- 1 broken bhalla
- Boiled chickpeas
- Diced boiled potatoes
- Red chili powder to taste
- Roasted cumin powder to taste
- White salt to taste
- Chaat masala to taste
- Spicy green chutney to taste
- Sweet tamarind chutney to taste
- Sweetened yogurt to taste
Method
- 1Place a piece of bhalla at the bottom of a transparent plastic serving bowl.
- 2Add a handful of boiled chickpeas and several chunks of diced boiled potatoes to the bowl.
- 3Sprinkle red chili powder, roasted cumin powder, and salt over the potato-chickpea-bhalla mixture.
- 4Add a spoonful of spicy green chutney to the mixture.
- 5Thoroughly mash and mix all the ingredients in the bowl using a plastic glove to create a flavorful, chunky filling.
- 6Take six individual golgappe shells and carefully break a small hole at the top of each shell.
- 7Generously scoop and fill the prepared potato-chickpea-bhalla mixture into each golgappa.
- 8Arrange the six fully stuffed golgappe on a plastic plate.
- 9Sprinkle a dry chaat masala over the stuffed golgappe.
- 10Pour a stream of sweetened white yogurt into each golgappa, allowing it to overflow and coat the shells.
- 11Drizzle a rich amount of reddish-brown sweet tamarind chutney over the golgappe.
- 12Add the bright green spicy chutney to complete the dish.
