Ingredients
- All-purpose flour (Maida): 260g
- Cornstarch: 20g
- Baking powder: 1 ½ tsp
- Baking soda: ½ tsp
- Salt: ¼ tsp
- Powdered sugar: 120g
- Milk: 220ml (boiled and cooled to room temperature)
- Refined sunflower oil (flavorless): 100ml
- Curd/Yogurt: 100g (about ½ cup, plain and unsweetened)
- Vanilla essence: 1 ½ tsp
- Parchment paper
Method
- 1Grease a 10x5 inch loaf pan lightly with oil and line it with parchment paper.
- 2Sift all-purpose flour, cornstarch, baking powder, baking soda, and salt into a large mixing bowl.
- 3Gently mix the sifted dry ingredients using a red silicone spatula until well combined.
- 4In a separate bowl, add powdered sugar, boiled and cooled milk, refined sunflower oil, plain curd, and vanilla essence.
- 5Whisk the wet ingredient mixture vigorously by hand for 1.5 to 2 minutes until the sugar dissolves and all ingredients are smoothly combined.
- 6Carefully pour the wet ingredient mixture into the bowl containing the sifted dry ingredients.
- 7Gently fold the batter using the cut and fold method with a red silicone spatula until a smooth, lump-free batter with a flowing, ribbon-like consistency is achieved, avoiding overmixing.
- 8Pour the prepared cake batter evenly into the parchment-lined loaf pan.
- 9Swirl a toothpick through the batter in the tin to release large air bubbles and gently tap the tin a couple of times on the counter.
- 10Preheat an OTG at 180°C for 10-15 minutes with both top and bottom heating rods on.
- 11Reduce the oven temperature to 170°C, place the loaf pan on the middle rack, and bake for 40-45 minutes until golden brown with a characteristic crack on top.
- 12Remove the baked cake from the oven and place it on a wire rack to cool completely for at least 45 minutes to an hour while still in its tin, covered with a clean kitchen towel.
- 13Once completely cooled, demould the cake from the tin, remove the parchment paper, and slice it into uniform, thick slices.
