Ingredients
  • 1/4 cup curd
  • 1/4 cup flavourless cooking oil

  • 1/4 cup + 2 tbsp milk
  • 1 cup all-purpose flour (maida)
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • A pinch of salt
  • 1/4 cup tutti frutti, divided
Method
  1. 1In a stainless steel bowl, combine 1/4 cup curd and 1/4 cup flavourless cooking oil, then whisk them vigorously until the mixture becomes smooth and creamy.
  2. 2Add 1/2 cup powdered sugar and 1/2 tsp pineapple essence to the wet mixture, then continue whisking until the sugar dissolves and the mixture is well combined.
  3. 3Pour in 1/4 cup milk and whisk again until fully integrated.
  4. 4Place a fine-mesh sieve over the bowl and sift 1 cup all-purpose flour, 1/2 tsp baking powder, 1/4 tsp baking soda, and a pinch of salt directly into the wet mixture.
  5. 5Dust about 3/4 of the 1/4 cup tutti frutti lightly with a bit of maida to prevent sinking, then add them to the batter.
  6. 6Gently fold the dry ingredients and tutti frutti into the wet mixture using a whisk or spatula, mixing just until no dry streaks of flour are visible.
  7. 7Add an additional 2 tablespoons of milk and mix again until the batter achieves a smooth, thick, and consistent pouring texture.
  8. 8Prepare seven muffin cups by nesting smaller patterned paper cups inside larger yellow-striped paper cups for added stability.
  9. 9Using an ice cream scoop, fill each prepared paper cup with muffin batter to about two-thirds capacity.
  10. 10Sprinkle the remaining tutti frutti on top of the batter in each cup for garnish.
  11. 11Preheat the oven to 180°C, then carefully arrange the filled muffin cups on a baking tray and bake for 35 minutes on the middle rack with both top and bottom heating elements on.
  12. 12After 35 minutes, remove the tray and insert a wooden skewer or toothpick into the center of a muffin; if it comes out clean, the muffins are fully baked.
  13. 13Remove the baked muffins from the oven, let them cool completely on the tray or a wire rack, then carefully peel off the paper cups and serve.
