Ingredients
  • 3/4 cup (190ml) warm milk
  • 1 tablespoon lemon juice or vinegar
  • 1/2 cup (90g) caster sugar
  • 1/4 cup (60ml) unflavored cooking oil
  • 1/2 cup (90g) finely ground suji (semolina)
  • 1/2 cup (30g) desiccated coconut powder
  • 1 cup (120g) all-purpose flour (maida)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cardamom powder
  • 1/4 cup (60ml) additional milk
  • Almond flakes for garnishing
  • 2 tablespoons honey
Method
  1. 1Pour 3/4 cup warm milk into a mixing bowl, add 1 tablespoon lemon juice or vinegar, stir, and allow to rest for 2-3 minutes to create a buttermilk-like consistency.
  2. 2Add 1/2 cup (90g) caster sugar and 1/4 cup (60ml) unflavored cooking oil to the milk mixture and whisk thoroughly until smooth.
  3. 3Add 1/2 cup finely ground suji (semolina) to the wet mixture, mix well, cover, and let the batter rest for 15 to 20 minutes.
  4. 4After resting, briefly whisk the mixture again and stir in 1/2 cup (30g) desiccated coconut powder.
  5. 5Sift 1 cup (120g) all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon cardamom powder into the mixture, then mix gently.
  6. 6Gradually add 1/4 cup (60ml) additional milk while continuously whisking until a smooth, lump-free batter is formed.
  7. 7Prepare a 10x5 inch cake tin by lightly greasing and lining it with parchment paper.
  8. 8Pour the batter into the prepared cake tin, smooth the top with a spatula, gently tap a few times, and generously garnish with almond flakes.
  9. 9Preheat an OTG (oven-toaster-griller) at 180°C for 10 minutes.
  10. 10Bake the cake in the preheated oven at 170°C for 40 minutes with both top and bottom heating elements on, until a toothpick inserted into the center comes out clean.
  11. 11Remove the cake from the oven, allow it to cool slightly on a wire rack, and then demould it while still warm.
  12. 12Brush the top of the warm cake generously with about 2 tablespoons of honey and sprinkle desiccated coconut powder over the honey.
  13. 13Slice the cake into thick, rectangular pieces and arrange for serving.
