Ingredients

  • ¾ cup sugar
  • 1½ tsp baking powder

  • 3 whole green cardamom pods

  • 2 tbsp saffron milk
  • 3 tbsp additional milk
  • 2 tbsp tutti frutti

Method
  1. 1Prepare buttermilk by whisking 1.5 cups warm milk with 1 tbsp lemon juice, resting for 5 minutes, then whisking again.
  2. 2Add 2 tbsp saffron milk and 0.5 cup refined sunflower oil to the buttermilk, whisking until smooth and light yellow.
  3. 3Grind 2 cups semolina, 3/4 cup sugar, and 3 whole green cardamom pods into a fine powder in a mixer grinder.
  4. 4Slowly incorporate the powdered semolina mixture into the wet ingredients, whisking diligently until the batter is lump-free and thick.
  5. 5Cover and rest the batter for 15-20 minutes to allow the semolina to absorb moisture, then whisk again.
  6. 6Add 1.5 tsp baking powder, 0.5 tsp baking soda, and 3 tbsp additional milk to the batter, gently whisking in one direction until just combined.
  7. 7Prepare a 7-inch round cake tin by greasing it with oil and lining the bottom and sides with parchment paper.
  8. 8Pour the batter into the prepared tin, gently tap to release air bubbles, then coat 2 tbsp tutti frutti with flour and sprinkle generously over the top.
  9. 9Preheat a large kadai (wok) for 5 minutes on medium heat with a metal stand placed inside.
  10. 10Carefully position the cake tin on the stand within the kadai, cover with a lid, and bake for the initial 5 minutes on medium heat, then reduce flame to low for another 40-45 minutes without opening the lid.
  11. 11After approximately 50 minutes total, insert a toothpick into the center to confirm the cake is baked (it should come out clean), then remove the cake from the kadai and let it cool completely before unmolding, peeling off parchment, slicing, and serving.
