- 1 cup all purpose flour
- 1/2 cup caster sugar
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 1/4 cup cocoa powder
- 1/2 cup mayonnaise
- 1/2 cup hot water
- 100g milk chocolate
- 50g cream
- Flaky sea salt to taste
Method
- 1Sift all-purpose flour, cocoa powder, caster sugar, baking soda, and salt into a mixing bowl.
- 2Add vanilla extract, hot water, and mayonnaise to the sifted dry ingredients in the bowl.
- 3Whisk the ingredients together, then use a spatula to scrape down the sides and fold the batter until smooth and well combined.
- 4Pour the batter into a 7-inch cake tin lined with parchment paper, spread evenly, and gently tap to release air bubbles.
- 5Bake in a preheated oven at 175°C for 30-35 minutes.
- 6For the ganache, combine milk chocolate and cream, then melt in a double boiler or microwave and cool.
- 7Place the cooled cake on a serving plate, spread the cooled milk chocolate ganache evenly across the top, and create decorative wavy patterns.
- 8Sprinkle flaky sea salt over the ganache-topped cake.
- 9Cut and serve the cake.
