Ingredients
  • 1 cup powdered sugar
  • 1/3 cup melted unsalted butter
  • 1/2 cup yogurt
  • Approximately 1/2 cup + 3 tablespoons milk
  • About 1/2 teaspoon vanilla essence
  • 1/4 teaspoon salt
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1.5 tablespoons cocoa powder
Method
  1. 1In a large silver mixing bowl, combine 1 cup powdered sugar, 1/3 cup melted unsalted butter, 1/2 cup yogurt, an initial 1/4 cup of milk, a few drops of vanilla essence, and a pinch of salt.
  2. 2Whisk vigorously for about 1.5-2 minutes until the mixture is smooth and creamy.
  3. 3Place a sieve over the bowl and sift 1.5 cups of all-purpose flour, 1 level teaspoon of baking powder, and 1/4 teaspoon of baking soda directly into the wet mixture.
  4. 4Begin mixing the dry and wet ingredients with a whisk, gradually adding more milk until a smooth, flowing consistency is achieved.
  5. 5Divide the prepared batter evenly into two separate bowls.
  6. 6To one bowl, add 1.5 tablespoons of sifted cocoa powder and 2 tablespoons of milk, then mix thoroughly until a smooth, chocolate-colored batter with a flowing consistency is formed.
  7. 7To the other bowl (plain batter), add 1 tablespoon of milk and mix to ensure both batters have a similar, flowing consistency.
  8. 8Line a 10x5 inch loaf pan with parchment paper, ensuring the sides are also covered.
  9. 9Spoon alternate layers of the plain white batter and the chocolate brown batter into the prepared loaf pan, adding small portions in segments.
  10. 10Take a toothpick or a thin skewer and gently swirl through the batters in the pan to create an S-shape or zigzag pattern for the marble effect, then gently tap the pan a few times.
  11. 11Place the loaf pan on a wire rack and bake in a preheated OTG at 180°C for approximately 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  12. 12Once baked, remove the cake from the oven and cover it with a clean kitchen towel to lock in moisture as it cools completely.
  13. 13Carefully demold the cooled cake and gently peel off the parchment paper, then slice into thick, rectangular pieces for serving.
