Ingredients
  • 2 large overripe bananas
  • 1/4 to 1/3 cup vegetable oil
  • 1 cup white granulated sugar
  • 1.5 to 2 cups all-purpose flour
  • 1 teaspoon cinnamon powder
  • 1 to 2 teaspoons baking soda
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon balsamic vinegar
  • 1/2 cup chopped walnuts
  • 1/4 to 1/2 cup milk
  • 1 banana (for topping)
  • Hazelnut spread (for garnish)
Method
  1. 1Peel and mash two overripe bananas in a bowl until a lumpy paste forms.
  2. 2Add vegetable oil and white granulated sugar to the mashed bananas and stir well until smoothly combined.
  3. 3Sift all-purpose flour, cinnamon powder, and baking soda into a large measuring jug.
  4. 4Pour the mashed banana mixture (wet ingredients) into the sifted dry ingredients.
  5. 5Add maple syrup or honey, balsamic vinegar, and chopped walnuts to the batter, then gently fold.
  6. 6Pour in milk and mix with a spatula until the batter is thick and well-combined.
  7. 7Pour the batter into a parchment-lined rectangular loaf pan and arrange banana slices on top.
  8. 8Bake in a preheated oven at 170°C (338°F) for 35 to 40 minutes.
  9. 9Remove the golden-brown banana bread from the oven, place it on a cutting board to cool slightly, then slice.
  10. 10Drizzle hazelnut spread on the sliced banana bread for serving.
