Ingredients
- 650g mixed seafood
- 3 tbsp butter
- 100g streaky bacon
- 1 tbsp minced garlic
- 1/4 cup white wine
- 1/3 cup all-purpose flour
- 4 cups chicken stock
- 1.5 cups diced carrots
- 2.5 cups diced potatoes
- 1 cup heavy cream
- 1 cup corn
- 2 tsp fish sauce
- Pinch black pepper
- 3 tbsp chives
Method
- 1Separate pre-cooked mussels; cut salmon and white fish into bite-sized chunks.
- 2Melt butter in a large pot.
- 3Add diced bacon and fry until crispy; remove bacon, reserving some for garnish.
- 4Sauté minced garlic in rendered bacon fat and butter.
- 5Deglaze pot with white wine.
- 6Stir in all-purpose flour to create a roux.
- 7Gradually whisk in chicken stock until smooth.
- 8Add diced potatoes and carrots, and most of the cooked bacon.
- 9Simmer for 10 minutes until vegetables are cooked.
- 10Stir in heavy cream, fish sauce, and black pepper.
- 11Add corn and fresh seafood (salmon, white fish, squid, shrimp); cook for 3 minutes until just tender.
- 12Stir in reserved cooked mussels to warm through.
- 13Serve hot, garnished with chives and reserved crispy bacon.
