Ingredients
  • 650g mixed seafood
  • 3 tbsp butter
  • 100g streaky bacon
  • 1 tbsp minced garlic
  • 1/4 cup white wine
  • 1/3 cup all-purpose flour
  • 4 cups chicken stock
  • 1.5 cups diced carrots
  • 2.5 cups diced potatoes
  • 1 cup heavy cream
  • 1 cup corn
  • 2 tsp fish sauce
  • Pinch black pepper
  • 3 tbsp chives
Method
  1. 1Separate pre-cooked mussels; cut salmon and white fish into bite-sized chunks.
  2. 2Melt butter in a large pot.
  3. 3Add diced bacon and fry until crispy; remove bacon, reserving some for garnish.
  4. 4Sauté minced garlic in rendered bacon fat and butter.
  5. 5Deglaze pot with white wine.
  6. 6Stir in all-purpose flour to create a roux.
  7. 7Gradually whisk in chicken stock until smooth.
  8. 8Add diced potatoes and carrots, and most of the cooked bacon.
  9. 9Simmer for 10 minutes until vegetables are cooked.
  10. 10Stir in heavy cream, fish sauce, and black pepper.
  11. 11Add corn and fresh seafood (salmon, white fish, squid, shrimp); cook for 3 minutes until just tender.
  12. 12Stir in reserved cooked mussels to warm through.
  13. 13Serve hot, garnished with chives and reserved crispy bacon.
