Ingredients
- 6-8 pieces boneless, skinless chicken
- 2 tbsp chili powder
- 1 tbsp chipotle chili powder
- 3 tbsp minced garlic
- 5 tbsp butter
- ¼ cup chopped green onions
- 2 Fresno peppers, sliced
- Juice of 3 limes
- 2.5 tbsp honey
- ¼ cup chopped cilantro
- Salt to taste
- Pepper to taste
- 2 cups cooked white rice
- Fresh basil leaves for garnish
Method
- 1Place raw chicken pieces in a baking dish.
- 2Season chicken generously with chili powder, chipotle chili powder, minced garlic, salt, and pepper.
- 3Toss the chicken by hand to coat thoroughly.
- 4Place small pats of butter and chopped green onions on top of the seasoned chicken.
- 5Bake the chicken until golden-brown and cooked through.
- 6While chicken bakes, melt and brown butter in a small saucepan for the sauce.
- 7Add sliced Fresno peppers, fresh lime juice, and honey to the browned butter, stirring briefly.
- 8Remove the sauce from heat and stir in chopped cilantro.
- 9Serve the cooked chicken over fluffy white rice, topped with the chili lime sauce.
- 10Garnish with fresh basil leaves and coarse salt.
