Ingredients
- 4 bars (32 oz) full-fat cream cheese
- 1 cup granulated sugar
- 6 large eggs
- 2-3 earl grey tea bags
- Hot cream
- 1 teaspoon vanilla extract
- 2 cups heavy whipping cream
- 1/3 cup all-purpose flour
- 1/2 teaspoon salt
Method
- 1Place softened cream cheese in a large clear glass bowl.
- 2Add 1 cup of granulated sugar to the cream cheese.
- 3Use an electric hand mixer to cream the sugar and cream cheese together until smooth and fluffy.
- 4Add 6 large eggs one by one to the cream cheese mixture, beating with the electric mixer after each addition until fully incorporated.
- 5Steep 2-3 Earl Grey tea bags in hot cream in a separate small bowl, pressing and stirring the tea bags to infuse flavor.
- 6Add 1 teaspoon of vanilla extract to the main batter.
- 7Pour the tea-infused cream into the batter, followed by 2 cups of heavy cream.
- 8Mix all wet ingredients thoroughly with the electric hand mixer until the batter is smooth and well combined.
- 9Sift 1/3 cup of all-purpose flour directly into the batter using a fine-mesh sieve.
- 10Use the electric mixer to combine the flour into the batter until it is homogenous and smooth.
- 11Pour the entire batter through a fine-mesh sieve into another clean glass bowl to ensure an exceptionally smooth final product.
- 12Line a round springform pan with two layers of crinkled parchment paper, ensuring it fits the sides and extends above the rim.
- 13Pour the strained batter into the prepared springform pan.
- 14Bake the cheesecake at 400°F (200°C) for 70 minutes.
- 15Remove from the oven and allow to cool.
- 16Unlatch the springform pan and gently peel away the parchment paper from the sides of the cheesecake.
