Ingredients
- 4 cups Greek yogurt
- 1 tbsp freeze-dried strawberry powder
- 1 tbsp blue spirulina
- 1 rice cake
- 2 strawberries, sliced
- 1 tsp honey
- 1 rye cracker
- 1 banana, sliced
- 1/4 tsp cinnamon powder
Method
- 1Scoop plain Greek yogurt into two separate bowls.
- 2Add freeze-dried strawberry powder to one bowl and blue spirulina to the other.
- 3Mix each bowl of yogurt until powders are thoroughly incorporated and colors are uniform.
- 4Line a metal strainer with cheesecloth and place it over a larger bowl.
- 5Scoop the pink yogurt into one side of the cheesecloth and the blue yogurt into the other.
- 6Gather the cheesecloth edges and tie securely to form a tight bundle.
- 7Place the yogurt bundle back into the strainer and refrigerate for several hours or overnight to drain whey.
- 8Unwrap the thickened, strained yogurt from the cheesecloth.
- 9Transfer the strained yogurt onto a plate and swirl the pink and blue sections together.
- 10Serve by spreading swirled yogurt onto a rice cake, topping with sliced strawberries and a drizzle of honey.
- 11Alternatively, spread on a rye cracker and top with sliced banana and a sprinkle of cinnamon.
