Method
- 1Combine eggs, maple syrup, milk, and vanilla extract in a large mixing bowl; whisk until uniform.
- 2Add white flour, cocoa powder, and espresso powder to the wet mixture, then stir until just combined.
- 3Stir dark chocolate chunks and melted butter into the batter.
- 4Scoop the batter into paper-lined muffin tins.
- 5Bake the muffins until cooked through and golden brown.
- 6Prepare chocolate ganache by melting dark chocolate chips and chopped chocolate in a saucepan, then whisk until smooth and glossy.
- 7Once muffins are baked and cooled slightly, core a small hole into the center of each muffin using a knife.
- 8Pour a spoonful of warm ganache into each cored hole.
- 9Gently press the removed muffin top back into place.
