Ingredients
  • 2 whole eggs
  • 1 cup maple syrup

  • 1 tsp espresso powder
  • 1 cup dark chocolate chunks
  • 1/4 cup melted butter
  • 1 cup dark chocolate chips
  • 1/2 cup chopped chocolate
Method
  1. 1Combine eggs, maple syrup, milk, and vanilla extract in a large mixing bowl; whisk until uniform.
  2. 2Add white flour, cocoa powder, and espresso powder to the wet mixture, then stir until just combined.
  3. 3Stir dark chocolate chunks and melted butter into the batter.
  4. 4Scoop the batter into paper-lined muffin tins.
  5. 5Bake the muffins until cooked through and golden brown.
  6. 6Prepare chocolate ganache by melting dark chocolate chips and chopped chocolate in a saucepan, then whisk until smooth and glossy.
  7. 7Once muffins are baked and cooled slightly, core a small hole into the center of each muffin using a knife.
  8. 8Pour a spoonful of warm ganache into each cored hole.
  9. 9Gently press the removed muffin top back into place.
