Method
- 1In a large bowl, whisk together 85g peanut butter, 42g honey, 42g oil, 118g water, and 2 eggs until smooth and evenly combined.
- 2Grate approximately 120g of carrots into fine shreds.
- 3Add 300g whole wheat flour, 8g baking soda, and the shredded carrots to the wet mixture, then mix with a whisk and spatula until a thick, orange-speckled batter forms.
- 4Line a square baking pan with parchment paper, pour the batter into the pan, spread it evenly, and bake until cooked through.
- 5Peel 450g of potatoes, cut them into chunks, and steam until very tender.
- 6Transfer the steamed potatoes to a clean bowl, add 185g plain yogurt, and use a hand mixer to mash and whip until smooth, creamy, and lump-free.
- 7Once the baked carrot cake has cooled, use a 4-inch round cookie cutter to cut out three circular cake layers.
- 8Place one cake layer on a cake stand, spread a layer of mashed potato frosting over it, and repeat with the second and third cake layers.
- 9Use an offset spatula to smoothly cover the top and sides of the entire layered cake with the remaining mashed potato frosting.
- 10Decorate the cake by piping small rosettes around the top edge, placing a bone-shaped dog biscuit in the center, and gently pressing shredded carrots around the base.
