Ingredients
  • 9-10 Medjool dates, pitted
  • 1 tbsp shredded coconut
  • 1-2 tbsp chopped nuts (e.g., peanuts)
  • 6-8 tbsp peanut butter
  • 2 medium bananas
  • 1/4 cup melted chocolate
Method
  1. 1Pit and slice 9-10 dates lengthwise, then arrange them sticky-side up on parchment paper, forming an irregular rectangular shape.
  2. 2Cover with another piece of parchment paper and use a rolling pin to flatten the dates into a thin, continuous sheet.
  3. 3Remove the top parchment paper and sprinkle shredded coconut, followed by chopped nuts, generously over the flattened dates.
  4. 4Spread a thick, even layer of peanut butter over the entire surface of the dates, covering the coconut and nuts.
  5. 5Cut the flattened date sheet down the middle into two long rectangles.
  6. 6Place a peeled banana lengthwise on one edge of each date-peanut butter rectangle.
  7. 7Carefully roll up each rectangle tightly, encasing the banana and forming a log-like shape with the crunchy coating on the outside.
  8. 8Place the two rolls on parchment paper and transfer them to a refrigerator for chilling until firm.
  9. 9Once chilled and firm, remove the rolls and slice them into individual, bite-sized "sushi" pieces.
  10. 10Serve the date sushi pieces with melted chocolate for dipping and chopsticks for presentation.
