- 1.5 cups all-purpose flour
- 2 tablespoons suji
- 2 tablespoons oil (for dough)
- 0.5 teaspoon salt
- 0.5 teaspoon cumin seeds
- 0.5 cup water
- Oil for deep frying
- 1 tablespoon oil (for dal)
- 1 teaspoon cumin seeds (for dal)
- 1 cup chana dal
- 1 teaspoon chopped ginger
- 1 teaspoon chopped green chilies
- 1 teaspoon salt (for dal)
- 0.5 teaspoon turmeric
- 2 cups water (for dal)
- 0.25 teaspoon black pepper
- 0.5 teaspoon garam masala
- 0.5 teaspoon mango powder
- Tamarind chutney
- Chopped cucumber
Method
- 1Combine all-purpose flour, suji, oil, salt, and cumin seeds; mix well.
- 2Gradually add water and knead into a firm dough.
- 3In a pressure cooker, heat oil, add cumin seeds, chana dal, ginger, green chilies, salt, turmeric, and water.
- 4Pressure cook the dal for about 8 minutes.
- 5Once cooked, add black pepper, garam masala, and mango powder to the dal; mix well.
- 6Knead the pakwan dough again and divide into small portions.
- 7Roll each portion thinly into a 5-inch circle.
- 8Prick holes on both sides of the rolled dough using a fork.
- 9Cut the rolled dough into triangular pieces.
- 10Deep fry the pakwan pieces in hot oil until crispy and golden.
- 11Assemble by topping pakwan pieces with dal, tamarind chutney, and chopped cucumber.
