Ingredients
- 2 lbs chicken
- 1 large onion
- 3 shallots
- 3 celery stalks
- 4 medium carrots
- 2 sprigs fresh rosemary
- 5 sprigs fresh thyme
- 1 tsp dried herbs
- 1.5 tsp salt
- 0.75 tsp black pepper
- 1 parmesan rind
- 1.5 cups uncooked white rice
- 2 cups fresh spinach
- 1/4 cup chopped fresh parsley
- 7 cups chicken broth
- 1/2 lemon (juice or zest)
Method
- 1Place chicken pieces at the bottom of the slow cooker.
- 2Add chopped onion, shallots, celery, and carrots over the chicken.
- 3Pour chicken broth over the ingredients, ensuring they are covered.
- 4Nestle in fresh sprigs of thyme and rosemary, then season generously with salt, pepper, and dried herbs.
- 5Stir all ingredients gently to combine, then place a parmesan rind into the liquid.
- 6Cover the slow cooker and cook on low for 4-6 hours until the chicken is tender and cooked through.
- 7Shred the cooked chicken directly in the slow cooker.
- 8Approximately 20 minutes before serving, stir in the uncooked white rice and cook until tender.
- 9Stir in fresh spinach until wilted into the hot soup.
- 10Ladle the hearty soup into bowls, garnish with fresh chopped parsley and a squeeze of lemon, and serve warm.
