Ingredients

  • 3 celery stalks
  • 4 medium carrots
  • 2 sprigs fresh rosemary

  • 0.75 tsp black pepper
  • 1 parmesan rind
  • 1.5 cups uncooked white rice
  • 2 cups fresh spinach
  • 1/4 cup chopped fresh parsley
  • 7 cups chicken broth
  • 1/2 lemon (juice or zest)
Method
  1. 1Place chicken pieces at the bottom of the slow cooker.
  2. 2Add chopped onion, shallots, celery, and carrots over the chicken.
  3. 3Pour chicken broth over the ingredients, ensuring they are covered.
  4. 4Nestle in fresh sprigs of thyme and rosemary, then season generously with salt, pepper, and dried herbs.
  5. 5Stir all ingredients gently to combine, then place a parmesan rind into the liquid.
  6. 6Cover the slow cooker and cook on low for 4-6 hours until the chicken is tender and cooked through.
  7. 7Shred the cooked chicken directly in the slow cooker.
  8. 8Approximately 20 minutes before serving, stir in the uncooked white rice and cook until tender.
