Ingredients
- 600 g / 1.2 lb pork tenderloin
- 2 tbsp fish sauce
- 1 1/2 tbsp + 1/2 cup cornflour/cornstarch
- ~1 cup cooking oil (canola, veg, sunflower, peanut)
- 1/2 cup sweet chilli sauce
- 1 1/2 tbsp lime juice
- 2 garlic cloves, finely grated
- White rice
- Fresh coriander/cilantro leaves
- Sliced green onion
- Lime wedges
- Sliced cucumber
- Tomato wedges
Method
- 1Trim silver skin from pork tenderloin and cut into uniform 1-inch bite-sized cubes.
- 2Place pork cubes in a mixing bowl, add 1 tbsp fish sauce, and mix well.
- 3Add 1 1/2 tbsp cornflour and coat pork, then add 1/2 cup cornflour and coat thoroughly, pressing it onto the meat until sticky.
- 4Transfer coated pork to a sieve and shake vigorously to remove excess cornflour.
- 5Heat cooking oil in a pan until it sizzles when a piece of pork is dipped in.
- 6Shallow-fry pork bites in batches for approximately 2 minutes per side until golden-brown and crispy.
- 7Remove fried pork using a slotted spoon and place on a paper towel-lined tray to drain excess oil.
- 8Drain remaining oil from the pan and quickly wipe it clean, leaving minimal residue.
- 9Pour sweet chilli sauce, lime juice, 1 tbsp fish sauce, and finely grated garlic into the pan and bring to a simmer.
- 10Return the cooked crispy pork bites to the pan with the sauce and toss to coat evenly.
- 11Serve immediately with white rice, garnished with fresh cilantro leaves, sliced green onion, lime wedges, sliced cucumber, and tomato wedges.
