Ingredients
  • 1.25 lbs ground beef
  • 2.5 cups diced sweet potatoes
  • 1 medium onion
  • 2 tbsp taco seasoning
  • 0.5 cup broth
  • 1 can black beans
  • 8 corn tortillas
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 2 avocados
  • 0.5 cup yogurt
  • 0.25 cup chopped cilantro
  • 1 lime
  • Sea salt to taste
  • Sesame seeds for garnish
Method
  1. 1Brown ground beef in a cast-iron skillet.
  2. 2Add diced sweet potatoes and sliced onions to the skillet; cook until tender.
  3. 3Season generously with taco seasoning and pour in broth.
