Ingredients
- 1 package spicy Italian chicken sausage
- 1 medium white onion, chopped
- 2 tablespoons minced garlic
- 1 cup sliced carrots
- 1 cup chopped celery
- 1 tablespoon Italian seasoning
- 400ml chicken bone broth
- 2 cups fresh baby spinach
- 1/2 cup chopped sun-dried tomatoes
- 2 cans white beans, drained and rinsed
- 1/2 cup milk or cream
- 1/2 cup shaved Parmesan cheese
- 1 tablespoon fresh lemon juice
- Fresh chopped herbs for garnish
- Red pepper flakes for garnish
Method
- 1Sauté ground spicy Italian chicken sausage in a pot until browned and crumbled.
- 2Add chopped white onions and minced garlic to the pot, cooking until onions are softened.
- 3Stir in sliced carrots, chopped celery, and Italian seasoning.
- 4Pour in chicken bone broth and bring the mixture to a simmer.
- 5Add fresh baby spinach, chopped sun-dried tomatoes, and drained white beans to the pot.
