Ingredients

Method
- 1Thinly slice button mushrooms, dice red bell pepper, and slice a red onion into crescent shapes.
- 2Place chopped mushrooms, bell pepper, onion, whole cherry tomatoes, and whole garlic cloves on a baking tray.
- 3Drizzle the vegetables generously with olive oil and mix thoroughly by hand.
- 4Bake the vegetables in an oven until soft, tender, and caramelized.
- 5Transfer the roasted vegetables into a blender jar.
- 6Add chili oil, tomato puree, fresh cream, salt, dried herbs, and a splash of water to the blender.
- 7Blend the ingredients until they form a smooth, creamy orange-red sauce.
- 8In a separate pot, boil spaghetti in water, reserving a portion of the starchy pasta water before draining.
- 9Pour the blended creamy sauce into a pan on the stovetop.
- 10Add some of the reserved pasta water to the sauce and stir to achieve the desired consistency.
- 11Add the cooked spaghetti into the sauce in the pan.
- 12Toss and mix the spaghetti thoroughly with tongs to ensure every strand is evenly coated.
