Ingredients
  • 1 cup plain yogurt
  • 1 teaspoon Aleppo pepper
  • 1 shallot
  • 1 cup chopped fresh herbs (dill, mint, parsley)
  • 0.5 teaspoon salt
  • 1 tablespoon vinegar
  • 1 teaspoon sugar
Method
  1. 1Scoop plain, fluid yogurt into a clear glass mixing bowl.
  2. 2Add one teaspoon of Aleppo pepper to the yogurt.
  3. 3Peel and finely dice one shallot on a cutting board.
  4. 4Pick fresh dill, mint, and parsley from their stems, then finely chop them.
  5. 5Scrape the finely diced shallots and chopped herbs into the yogurt mixture.
  6. 6Sprinkle salt over the mixture and thoroughly mix all ingredients with a spatula.
  7. 7Taste the sauce to assess its flavor.
  8. 8Drizzle in a small amount of dark vinegar and mix.
  9. 9Add a little bit of sugar to round out the edges and balance the sourness, then mix again.
