Ingredients
- 1 tsp butter or olive oil
- 2-3 cloves garlic, chopped
- ½ cup boiled sweet corn
- 1 cup chopped spinach
- Salt, to taste
- Chilli flakes, to taste
- Peri peri seasoning, to taste
- Italian seasoning, to taste
- 100g high-protein low-fat paneer
- 3-4 tbsp water
- Hot water, as needed
- 1 tsp chilli oil
Method
- 1Blend 100g high-protein low-fat paneer with 3-4 tbsp water until smooth to make a paste.
- 2Heat 1 tsp butter or olive oil in a pan on the stovetop.
- 3Add 2-3 cloves chopped garlic and sauté until fragrant and light golden-brown.
- 4Add ½ cup boiled sweet corn kernels to the pan.
- 5Add 1 cup chopped spinach and cook for 2-3 minutes until it wilts.
- 6Season the mixture with salt, chilli flakes, peri peri seasoning, and Italian seasoning, to taste.
- 7Stir the mixture together and cook on high flame for about two to three minutes.
- 8Reduce the heat and pour the blended paneer paste into the pan.
- 9Thoroughly mix the paneer paste with the corn and spinach, adding hot water as needed to achieve the desired creamy thickness.
- 10Stir until the dish becomes uniformly creamy and well combined.
- 11Drizzle 1 tsp chilli oil on top.
- 12Serve hot, optionally with rice or pasta.
