  • 3 cups shredded carrots
  • 4 cups milk
  • 1/3 cup sugar
  • 1/4 tsp crushed green cardamom
  • 4 broken cashews
  • 2 tbsp sliced almonds
Method
  1. 1Wash and peel carrots, then shred 3 cups.
  2. 2Blend 1 cup shredded carrots with 1 cup milk to form a smooth paste.
  3. 3Heat a pan and add the remaining 3 cups of milk.
  4. 4Once hot, add the remaining 2 cups of shredded carrots and the blended carrot paste.
  5. 5Bring the mixture to a boil, then reduce heat and simmer for 15-18 minutes, stirring frequently and scraping the sides of the pan, until the milk reduces and carrots are tender.
  6. 6Stir in 1/3 cup sugar, 1/4 tsp crushed green cardamom, broken cashews, and sliced almonds.
  7. 7Cook for a few more minutes until the kheer thickens slightly.
  8. 8Remove from heat, let it cool, and serve chilled.
