  • 1 kg chicken drumsticks + thighs (bone-in)
  • 200 g thick curd (yogurt)
  • 1 tbsp ginger-garlic paste
  • 2 tbsp coriander stems, finely chopped
  • 1 tsp chilli flakes (for marinade)
  • 1 tsp cumin powder
  • 1½ tsp coriander powder
  • 1 tsp garam masala
  • ¼ tsp black pepper (for marinade)
  • 1½ tsp salt (for marinade) or to taste
  • 1 tbsp vinegar
  • 1 tbsp neutral oil (for cooking chicken)
  • 1 tbsp light butter
  • 1 medium onion, finely chopped
  • 1–2 green chillies, finely chopped
  • 1 tbsp whole wheat atta or maida
  • ¾ cup (180 ml) cold skim milk
  • ½ slice (≈10 g) processed cheese slice
  • ½ tsp chilli flakes (for sauce)
  • ¼ tsp black pepper (for sauce)
  • ¼ tsp salt (for sauce, adjust to taste)
  • 1–2 tbsp coriander leaves, chopped
Method
  1. 1In a bowl, combine curd, ginger-garlic paste, finely chopped coriander stems, cumin powder, 1 tsp chili flakes, garam masala, coriander powder, ¼ tsp black pepper, 1½ tsp salt, and vinegar for the marinade.
  2. 2Add scored bone-in chicken drumsticks and thighs to the marinade and mix well to coat completely.
  3. 3Heat oil in a wide pan, then add the marinated chicken pieces along with any leftover marinade.
  4. 4Cover the pan and cook the chicken on medium heat, turning occasionally, until well browned and fully cooked.
  5. 5Remove the cooked chicken pieces from the pan.
  6. 6Add light butter to the same pan and sauté finely chopped onion and green chillies until they begin to brown.
  7. 7Sprinkle whole wheat flour over the browned onions and chilies and cook for a short while, stirring.
  8. 8Pour milk into the pan, stir well, and cook on a low flame until the sauce thickens and begins to simmer.
  9. 9Season the simmering sauce with ½ tsp chili flakes, ¼ tsp salt, and ¼ tsp black pepper, then add half a cheese slice and stir until it melts and integrates.
  10. 10Return the previously cooked chicken pieces to the thickened sauce and coat thoroughly.
  11. 11Cook the dish for another couple of minutes to allow the flavors to meld.
  12. 12Garnish the dish with finely chopped coriander leaves and an additional sprinkle of chili flakes before serving.
