Ingredients
  • A small amount oil
  • A small amount minced garlic
  • 1-2 tablespoons tomato paste
  • About half a cup diced fresh tomatoes
  • Approximately 2-3 cups water
  • A spoonful miso paste
  • A small sachet dashi powder
  • One serving pre-cooked udon noodles
  • Several folded pieces bean curd sheets
  • About 3-4 slices thinly sliced beef
  • One small head bok choy
  • A small handful chopped green onions
Method
  1. 1Add a small amount of oil to a pot on an induction cooktop.
  2. 2Add minced garlic and sauté until fragrant.
  3. 3Stir in tomato paste, then add diced fresh tomatoes.
  4. 4Stir and allow tomatoes to soften slightly, releasing steam.
  5. 5Pour water into the pot to create the broth.
  6. 6Add miso paste and stir until fully dissolved.
  7. 7Mix in dashi powder to enhance the umami flavor.
  8. 8Once the broth is simmering and well-combined, add the pre-cooked udon noodles.
  9. 9Add several folded pieces of bean curd sheets.
  10. 10Arrange thinly sliced raw beef in the broth.
  11. 11Place the small bok choy head into the simmering soup.
  12. 12Cover the pot with its lid, allowing the ingredients to cook and meld together.
  13. 13After a brief simmer, remove the lid.
  14. 14Garnish the dish with a sprinkle of freshly chopped green onions.
  15. 15Serve the soup directly from the cooking pot.
