- 4 large eggs
- 1/4 cup cottage cheese
- Salt to taste
- Pepper to taste
- 1 tbsp olive oil
Method
- 1Crack 4 large eggs into a mixing bowl.
- 2Add 1/4 cup cottage cheese to the eggs.
- 3Season with salt and pepper to taste.
- 4Vigorously whisk the egg and cottage cheese mixture until well combined, frothy, and uniformly yellow.
- 5Place a frying pan on a gas stove over medium-high heat.
- 6Drizzle 1 tbsp olive oil into the hot pan and swirl to coat the bottom.
- 7Pour the whisked egg and cottage cheese mixture into the hot pan.
- 8After about a minute, as the edges set, gently drag the partially cooked egg from the sides towards the center with a spatula.
- 9Repeat the folding and stirring process on low heat until no liquid remains and the eggs are soft, fluffy, and cooked through.
