Method
- 1In a food processor, combine flour, turmeric powder, a handful of ajwain, salt to taste, and 1-2 tablespoons oil (moin); add water and process until a stiff yellow dough forms.
- 2Similarly, combine flour, a handful of ajwain, salt to taste, and 1-2 tablespoons oil (moin) in the food processor; add spinach puree and process until a green dough forms.
- 3Combine flour, a handful of ajwain, salt to taste, and 1-2 tablespoons oil (moin) in the food processor; add beetroot puree and process until a rich red dough forms.
- 4Place all three colored doughs on a plate and cover them to rest.
- 5Take each color of dough one by one, place a portion on parchment paper, and roll out thinly into a large, even circle or oval.
- 6Gently prick the rolled-out dough all over with a fork to prevent puffing during cooking.
- 7Using a pizza cutter, cut the thin dough sheet into numerous narrow strips, keeping them largely attached in their circular shape.
- 8Carefully transfer the entire parchment paper with the cut dough strips into the air fryer basket.
