Ingredients
  • Flour
  • A handful carom seeds (ajwain)
  • Salt to taste
  • 1-2 tablespoons oil (moin) per batch
  • Water
  • A pinch turmeric powder
  • Spinach (palak) puree
  • Beetroot puree
Method
  1. 1In a food processor, combine flour, turmeric powder, a handful of ajwain, salt to taste, and 1-2 tablespoons oil (moin); add water and process until a stiff yellow dough forms.
  2. 2Similarly, combine flour, a handful of ajwain, salt to taste, and 1-2 tablespoons oil (moin) in the food processor; add spinach puree and process until a green dough forms.
  3. 3Combine flour, a handful of ajwain, salt to taste, and 1-2 tablespoons oil (moin) in the food processor; add beetroot puree and process until a rich red dough forms.
  4. 4Place all three colored doughs on a plate and cover them to rest.
  5. 5Take each color of dough one by one, place a portion on parchment paper, and roll out thinly into a large, even circle or oval.
  6. 6Gently prick the rolled-out dough all over with a fork to prevent puffing during cooking.
  7. 7Using a pizza cutter, cut the thin dough sheet into numerous narrow strips, keeping them largely attached in their circular shape.
  8. 8Carefully transfer the entire parchment paper with the cut dough strips into the air fryer basket.
  9. 9Insert the air fryer basket into the air fryer and air-fry until the mathri sticks are crispy.
