- Plain yogurt, divided into three portions
- 2-3 tablespoons grated beetroot
- 2-3 tablespoons green mint chutney
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon sugar (for yellow yogurt)
- 1 cup boiled black chickpeas (kala chana)
- 1/2 cup boiled and mashed/chopped potatoes
- 1/4 cup finely chopped red onion
- 1/4 cup finely chopped tomatoes
- Handful chopped fresh green coriander leaves
- 1 tablespoon finely chopped green chilies
- 1/2 teaspoon salt
- 1/2 teaspoon chaat masala
- 2-3 tablespoons imli chutney
- 1 tablespoon hari chutney
- Juice from half a lemon
- Crushed papdi
- Fresh coriander for garnish
- Yellow crispy flakes for garnish
- Black pepper (optional)
- Black salt (optional)
- Roasted jeera powder (optional)
- Red chilli powder (optional)
- Pomegranate (optional)
Method
- 1Divide plain yogurt into three small bowls.
- 2Add grated beetroot to one bowl and mix thoroughly to create a vibrant pink yogurt.
- 3Add mint chutney to another bowl and mix to create a light green colored yogurt.
- 4Add turmeric powder and sugar to the third bowl and mix to create a pale yellow colored yogurt.
- 5Combine boiled black chickpeas, boiled and mashed/chopped potatoes, chopped red onion, chopped tomatoes, chopped green chilies, and chopped fresh coriander leaves in a white bowl.
- 6Add salt, chaat masala, dark imli chutney, and green hari chutney to the chana mixture.
- 7Mix all ingredients well with a spoon to combine, then squeeze in juice from half a lemon and give a final stir.
- 8Place a layer of crushed papdi at the bottom of a clear glass serving cup.
- 9Add a spoonful of the prepared chana chaat mixture over the papdi.
- 10Spoon a layer of the yellow turmeric-flavored yogurt over the chaat.
- 11Add another layer of crushed papdi, followed by another spoonful of chana chaat mixture.
- 12Spoon a layer of the green mint-flavored yogurt over the chaat.
- 13Add another layer of crushed papdi, followed by the final layer of chana chaat mixture.
- 14Spoon the bright pink beetroot-flavored yogurt on top as the uppermost layer.
- 15Garnish the chaat with fresh coriander leaves and yellow crispy flakes before serving.
