- Fresh coconut
- 3/4 cup whipping cream
- 1/4 cup condensed milk
- 1/3 cup coconut cream
- 2 tbsp desiccated coconut (optional)
Method
- 1Optionally, crack open a whole brown coconut and carefully pry out the white coconut flesh, then clean the coconut shells for serving.
- 2Whip the whipping cream to stiff peaks.
- 3Add condensed milk to the whipped cream.
- 4Add coconut cream to the mixture.
- 5Optionally, add desiccated coconut.
- 6Mix all the ingredients together with an electric hand mixer until a smooth, thick, and uniformly creamy white mixture is formed.
- 7Pour the ice cream mixture into cleaned coconut shell halves or moulds of choice (e.g., a black rectangular metal loaf pan).
- 8If using a loaf pan, gently tap it on the counter to settle the mixture.
- 9Place the mixture in the freezer.
- 10Freeze overnight.
- 11Remove the frozen ice cream from the freezer and leave it on the counter for a few minutes to soften slightly before serving.
- 12Scoop and enjoy the ice cream, either in a crispy waffle cone or directly in the coconut shells.
