Ingredients
  • 1 cup light brown sugar
  • 2 tbsp all-purpose flour
  • 1 tbsp espresso powder
  • 3 tbsp melted butter
  • 1/2 cup solid butter
  • 1/4 cup golden honey
  • 1/2 cup thick white Greek yogurt
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
Method
  1. 1Prepare the cinnamon crunch mixture: Combine light brown sugar, 2 tablespoons all-purpose flour, espresso powder, and 3 tablespoons melted butter in a bowl. Mix until a cohesive, crumbly texture is achieved.
  2. 2Prepare the cake batter: Cream together the solid butter and honey in a separate bowl using an electric hand mixer until light and frothy.
  3. 3Add Greek yogurt, vanilla extract, and eggs to the wet mixture and blend again with the hand mixer.
  4. 4Incorporate 1.5 cups all-purpose flour, baking powder, baking soda, and salt into the wet ingredients and mix with the electric hand mixer until a thick batter forms.
  5. 5Layer the cake: Spread about half of the batter into a loaf pan lined with parchment paper.
  6. 6Add a layer of the prepared cinnamon crunch mixture over the batter in the pan.
  7. 7Spread the remaining cake batter on top of the crunch layer.
  8. 8Sprinkle the remaining cinnamon crunch mixture generously over the top of the cake batter.
  9. 9Bake the cake in a preheated oven until golden brown and a toothpick inserted comes out clean (approximately 45-55 minutes).
  10. 10After baking, while still warm, drizzle a thin stream of melted butter or a glaze over the top of the cake.
