- 1.5 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
Method
- 1Prepare the cinnamon crunch mixture: Combine light brown sugar, 2 tablespoons all-purpose flour, espresso powder, and 3 tablespoons melted butter in a bowl. Mix until a cohesive, crumbly texture is achieved.
- 2Prepare the cake batter: Cream together the solid butter and honey in a separate bowl using an electric hand mixer until light and frothy.
- 3Add Greek yogurt, vanilla extract, and eggs to the wet mixture and blend again with the hand mixer.
- 4Incorporate 1.5 cups all-purpose flour, baking powder, baking soda, and salt into the wet ingredients and mix with the electric hand mixer until a thick batter forms.
- 5Layer the cake: Spread about half of the batter into a loaf pan lined with parchment paper.
- 6Add a layer of the prepared cinnamon crunch mixture over the batter in the pan.
- 7Spread the remaining cake batter on top of the crunch layer.
- 8Sprinkle the remaining cinnamon crunch mixture generously over the top of the cake batter.
