Method
  1. 1Slide a pre-rolled, flat, circular piece of bhatura dough into hot, bubbling oil in a kadai.
  2. 2Gently press the floating dough into the hot oil using a slotted spoon to help it puff up.
  3. 3Allow the bhatura to cook until it becomes light golden-brown and fully inflated.
  4. 4Flip the bhatura over using the slotted spoon to cook and brown evenly on the other side.
  5. 5Once fully cooked and golden-brown on both sides, lift the bhatura out of the oil with the slotted spoon, allowing excess oil to drain.
  6. 6Place the freshly fried bhatura on a plate alongside the prepared chole, garnished with fresh cilantro, and a small bowl of green chutney.
