Ingredients
  • 8 cups milk (1/2 gallon)
  • 1/4 cup lemon juice
  • Freshly made paneer
  • 1/2 cup sugar
  • 2 teaspoons cocoa powder
  • 2 tablespoons heavy cream
  • 3 tablespoons semisweet chocolate chips
  • 2 tablespoons sliced pistachios
Method
  1. 1Boil milk in a large pot.
  2. 2Gradually add lemon juice to the boiling milk to curdle it.
  3. 3Drain the paneer from the whey water using a muslin cloth.
  4. 4Place the drained paneer on a wooden board and knead vigorously by hand until smooth and soft.
  5. 5Add granulated sugar and cocoa powder to the kneaded paneer.
  6. 6Knead the mixture further to evenly incorporate the sugar and cocoa powder.
  7. 7Transfer the paneer mixture to a non-stick pan and cook on a stovetop over medium heat for approximately 6 minutes, stirring continuously.
  8. 8Refrigerate the cooked paneer mixture for about an hour to cool down and firm up.
  9. 9Take small portions of the chilled paneer mixture (about one spoonful each) and roll them into smooth, round balls.
  10. 10Heat heavy cream and pour it over semisweet chocolate chips, then stir until melted to form a smooth chocolate sauce.
  11. 11Transfer the chocolate sauce into a piping bag and drizzle it in spiral patterns over each Sandesh ball.
  12. 12Sprinkle sliced green pistachios on top of the chocolate-drizzled Sandesh balls for garnish.
  13. 13Refrigerate the decorated Chocolate Sandesh Truffles again before serving.
