- 1 cup fresh or frozen raspberries
- 1/2 cup greek yogurt
- 1 teaspoon chia seeds
- 3 to 4 tablespoons honey
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil
- Small wooden popsicle sticks
- Dried rose petals for garnishing
Method
- 1Place raspberries and mash them with a fork until a chunky paste forms.
- 2Add greek yogurt, chia seeds, and honey to the mashed raspberries, then transfer to a small bowl.
- 3Mix all ingredients vigorously until a uniform, pale pink, chunky mixture is achieved.
- 4Spoon the mixture onto a parchment-lined baking sheet to form several small, round, individual clusters.
- 5Insert a wooden popsicle stick into the base of each cluster.
- 6Freeze the clusters on the baking sheet for 2-3 hours until solid.
- 7While the clusters are freezing, melt dark chocolate chips with coconut oil in a small bowl, stirring until smooth and glossy.
- 8Once the raspberry clusters are frozen solid, remove them from the freezer and individually dip each pop into the melted chocolate coating, allowing excess to drip off.
- 9Before the chocolate sets, sprinkle dried rose petals onto the chocolate-coated pops for garnish.
- 10Place the chocolate-coated pops back onto the parchment-lined baking sheet to allow the chocolate to fully set.
