Ingredients
  • 1 cup fresh or frozen raspberries
  • 1/2 cup greek yogurt
  • 1 teaspoon chia seeds
  • 3 to 4 tablespoons honey
  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil
  • Small wooden popsicle sticks
  • Dried rose petals for garnishing
Method
  1. 1Place raspberries and mash them with a fork until a chunky paste forms.
  2. 2Add greek yogurt, chia seeds, and honey to the mashed raspberries, then transfer to a small bowl.
  3. 3Mix all ingredients vigorously until a uniform, pale pink, chunky mixture is achieved.
  4. 4Spoon the mixture onto a parchment-lined baking sheet to form several small, round, individual clusters.
  5. 5Insert a wooden popsicle stick into the base of each cluster.
  6. 6Freeze the clusters on the baking sheet for 2-3 hours until solid.
  7. 7While the clusters are freezing, melt dark chocolate chips with coconut oil in a small bowl, stirring until smooth and glossy.
  8. 8Once the raspberry clusters are frozen solid, remove them from the freezer and individually dip each pop into the melted chocolate coating, allowing excess to drip off.
  9. 9Before the chocolate sets, sprinkle dried rose petals onto the chocolate-coated pops for garnish.
  10. 10Place the chocolate-coated pops back onto the parchment-lined baking sheet to allow the chocolate to fully set.
