Ingredients
  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp instant espresso powder
  • 2 large eggs
  • 2 large egg yolks
  • 4 oz dark chocolate, chopped
  • 4 squares dark chocolate
  • 1/4 cup unsalted butter
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 1 tbsp cocoa powder
Method
  1. 1Preheat oven and prepare heart-shaped molds by dusting with cocoa powder.
  2. 2In a large bowl, combine flour, sugar, and instant espresso powder.
  3. 3Add whole eggs and egg yolks to the dry mixture and whisk until smooth and frothy.
  4. 4In a saucepan, melt chopped dark chocolate and butter together until smooth.
  5. 5Pour the melted chocolate-butter mixture into the egg mixture and whisk thoroughly to create a glossy batter.
  6. 6Fill the prepared molds with the chocolate batter.
  7. 7Place a single square of dark chocolate into the center of each filled mold.
  8. 8Bake until the cakes are puffed and cracked with a molten center.
  9. 9While cakes bake, whip heavy cream until stiff peaks form.
  10. 10Serve the warm pudding cakes topped with whipped cream and chocolate shavings.
