Ingredients
- 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tsp instant espresso powder
- 2 large eggs
- 2 large egg yolks
- 4 oz dark chocolate, chopped
- 4 squares dark chocolate
- 1/4 cup unsalted butter
- 1 tsp vanilla extract
- 1 cup heavy cream
- 1 tbsp cocoa powder
Method
- 1Preheat oven and prepare heart-shaped molds by dusting with cocoa powder.
- 2In a large bowl, combine flour, sugar, and instant espresso powder.
- 3Add whole eggs and egg yolks to the dry mixture and whisk until smooth and frothy.
- 4In a saucepan, melt chopped dark chocolate and butter together until smooth.
- 5Pour the melted chocolate-butter mixture into the egg mixture and whisk thoroughly to create a glossy batter.
- 6Fill the prepared molds with the chocolate batter.
- 7Place a single square of dark chocolate into the center of each filled mold.
- 8Bake until the cakes are puffed and cracked with a molten center.
- 9While cakes bake, whip heavy cream until stiff peaks form.
- 10Serve the warm pudding cakes topped with whipped cream and chocolate shavings.
