Ingredients
  • 350 g bread flour (or 2 1/2 c + 2 tbsp)
  • 5 g active yeast (or 1 1/4 tsp)
  • 6 g salt (or 1 tsp)
  • 8 g sugar (or 2 tsp)
  • 235 g lukewarm milk (or 1 c minus 2 tsp, 2% or whole)
  • 18 g honey (or 2 1/2 tsp)
  • 18 g softened butter (or 3 1/2 tsp)
  • 4 g unsweetened cocoa powder (or 2 tsp)
  • 10 g water (or 2 tsp)
Method
  1. 1Add bread flour, yeast, salt, sugar, warm milk, and honey to a stand mixer and mix with a dough hook until a rough dough forms.
  2. 2Incorporate 18 grams of butter and continue kneading until the dough is smooth and elastic.
  3. 3Remove the dough and divide into two portions: approximately 360g for white dough and the remaining ~263g for chocolate dough.
  4. 4Mix cocoa powder and water to form a thick paste.
  5. 5Add the cocoa paste to the smaller dough portion in the stand mixer and knead until uniformly brown.
  6. 6Place both the white and chocolate doughs in separate bowls, cover with a cloth, and leave for their first rise until doubled in size.
  7. 7Gently punch down both risen doughs to release air.
  8. 8Roll out the white dough on a floured wooden board into a large, thin rectangular shape, using a loaf pan as a size guide.
  9. 9Roll out the chocolate dough into a slightly smaller rectangle.
  10. 10Carefully place the chocolate dough on top of the white dough.
  11. 11Roll the layered dough tightly from one end to the other, forming a log, and pinch the seam closed.
  12. 12Slice the log lengthwise down the middle, leaving one end attached, creating two strands.
  13. 13Braid the two strands together, revealing the marble pattern, and pinch the ends to seal.
  14. 14Place the braided dough into a greased loaf pan for its second rise.
  15. 15Cover the loaf pan and allow the dough to rise until it nearly fills the pan.
  16. 16Cover the loaf pan with its lid and bake.
