Ingredients
  • 15 g warm milk
  • 6 g instant yeast
  • 62 g softened unsalted butter
  • 34 g granulated sugar
  • 28 g beaten egg, room temperature
  • 135 g all-purpose flour
  • 1 g salt
  • 80 g brown sugar
  • 24 g molasses
  • 100 g heavy cream, warm
  • 1 g ground cinnamon

Method
  1. 1Combine warm milk with instant yeast in a bowl, stirring until dissolved.
  2. 2Add butter and granulated sugar to the yeast mixture and stir until a creamy consistency is achieved.
  3. 3Incorporate the beaten egg, then add all-purpose flour and salt, forming a thick, shaggy dough.
  4. 4Cover the bowl and allow the dough to rise for 50 minutes until visibly increased in volume.
  5. 5Punch down and briefly knead the risen dough, then divide it into 10 smooth balls.
  6. 6Cover the dough balls with aluminum foil and allow them to rest for 15 minutes.
  7. 7Cook each dough ball on a preheated waffle cone maker, pressing it flat into a thin, round, golden-brown wafel.
  8. 8In a small saucepan, combine brown sugar and molasses, heating and stirring until the sugar melts and the mixture boils into a dark, syrupy caramel.
  9. 9Carefully add heavy cream and ground cinnamon to the bubbling caramel, whisking continuously until thickened, then remove from heat to cool.
  10. 10While the wafels are still warm, place one wafel on a surface and carefully slice it horizontally into two thinner layers.
  11. 11Spoon approximately one tablespoon of the cooled caramel filling onto one half of the wafel and spread evenly, then place the other wafel half on top.
  12. 12Melt about 130g of chocolate in a separate bowl and dip each assembled stroopwafel halfway into the melted chocolate.
  13. 13While the chocolate is still wet, apply desired toppings such as toasted coconut flakes, chopped pistachios, and freeze-dried strawberry pieces.
  14. 14Place the decorated stroopwafels on a wire rack to allow the chocolate to set.
