Ingredients
  • 8 ounces bittersweet chocolate
  • 4 tablespoons unsalted butter
  • 2 ½ teaspoons vanilla extract
  • ½ teaspoon kosher salt
  • 4 large eggs
  • ½ cup sugar
  • 1 cup heavy cream
  • Flaky sea salt
Method
  1. 1Set up a double boiler and melt chocolate with butter until glossy and smooth.
  2. 2Remove from heat, stir in 1 tsp vanilla and a pinch of salt; set aside to cool.
  3. 3Separate 4 large eggs into yolks and whites.
  4. 4Whip egg yolks with half the sugar over double boiler until pale and thick; remove from heat, add vanilla and a pinch of salt.
  5. 5Whip egg whites with remaining sugar to stiff peaks.
  6. 6Gently fold the cooled chocolate mixture into the whipped egg yolks.
  7. 7Gently fold the whipped egg whites into the chocolate-yolk mixture.
  8. 8Portion mousse into serving dishes and chill until set.
  9. 9Whip heavy cream with remaining vanilla; serve with mousse, garnished with flaky sea salt.
