Ingredients
- 8 ounces bittersweet chocolate
- 4 tablespoons unsalted butter
- 2 ½ teaspoons vanilla extract
- ½ teaspoon kosher salt
- 4 large eggs
- ½ cup sugar
- 1 cup heavy cream
- Flaky sea salt
Method
- 1Set up a double boiler and melt chocolate with butter until glossy and smooth.
- 2Remove from heat, stir in 1 tsp vanilla and a pinch of salt; set aside to cool.
- 3Separate 4 large eggs into yolks and whites.
- 4Whip egg yolks with half the sugar over double boiler until pale and thick; remove from heat, add vanilla and a pinch of salt.
- 5Whip egg whites with remaining sugar to stiff peaks.
- 6Gently fold the cooled chocolate mixture into the whipped egg yolks.
- 7Gently fold the whipped egg whites into the chocolate-yolk mixture.
- 8Portion mousse into serving dishes and chill until set.
- 9Whip heavy cream with remaining vanilla; serve with mousse, garnished with flaky sea salt.
