  • 150g fresh low fat paneer
  • 8-10 soaked cashews
  • 2-3 spicy dry red chilies, soaked
  • 1 cheese cube (optional)
  • 2-3 whole garlic cloves
  • 1.5 tsp extra virgin olive oil
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp kashmiri red chili powder
  • 1/3 cup water (add as per requirement)
  • 1 tsp lemon juice or vinegar
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced yellow bell pepper
  • 1/4 cup diced red onion
  • 1/4 cup diced tomato
  • A small handful chopped fresh cilantro
  • Salt to taste
  • Chaat masala to taste
  • One medium avocado, diced (optional)
  • Two slices brown bread
  • 1 teaspoon ghee or melted butter
Method
  1. 1Add crumbled homemade paneer, grated cheese, pre-soaked cashews, and garlic cloves into a small blender jar.
  2. 2Pour in olive oil, sprinkle oregano and salt, add a splash of lemon juice or vinegar, and a portion of water.
  3. 3Blend these ingredients until a smooth, thick, and pale off-white cream is formed.
  4. 4To achieve the chipotle flavor and color, add pre-soaked dry red chilies and Kashmiri red chili powder to the blender.
  5. 5Blend again until the dip becomes a uniform, creamy peach/orange color with a smooth, spreadable consistency.
  6. 6In a mixing plate, combine finely diced green bell peppers, yellow bell peppers, red onions, tomatoes, chopped fresh cilantro, chaat masala, and salt.
  7. 7Optionally, add diced avocado to the vegetable mixture and gently toss to combine.
  8. 8Lay out two slices of brown bread and generously spread a layer of the prepared chipotle paneer dip on the inner side of each bread slice.
  9. 9Spoon a substantial amount of the vegetable and avocado filling onto one of the dip-smeared bread slices, then top with the other dip-smeared bread slice.
  10. 10Heat a tawa (flat griddle) over medium heat and place the assembled sandwich onto it.
  11. 11Drizzle or brush a small amount of ghee or melted butter onto the top surface of the bread and grill until the bottom side turns golden brown and crispy.
  12. 12Flip the sandwich, apply ghee or melted butter to the other side, and continue grilling until it also achieves a rich golden-brown and crispy texture.
  13. 13Remove the sandwich from the tawa, cut it diagonally in half, and serve hot.
