Ingredients
- 1 pound (450g) chicken thighs, sliced
- 1.5 tbsp fish sauce
- 1.5 tsp granulated sugar (for marinade)
- 2.5 tbsp oyster sauce
- 2.5 tbsp Golden Mountain Seasoning Sauce or soy sauce
- 1.5 tsp granulated sugar (for sauce)
- 2.5 tbsp water
- 1/3 cup minced garlic
- 2.5 tbsp crushed dried chili flakes
- 2.5 tbsp neutral cooking oil
- Green onions for garnish
- Thai basil for garnish
Method
- 1Trim and slice chicken thighs into 1/2-inch pieces
- 2Marinate chicken with fish sauce and sugar
- 3Mix oyster sauce, seasoning sauce (or soy sauce), sugar, and water for the sauce
- 4Grind dried chili flakes to a finer consistency
- 5Heat oil in a wok or pan over high heat
- 6Sear chicken until browned on both sides, then remove from pan
- 7Sauté minced garlic and ground chili flakes until fragrant
- 8Return chicken to the pan, add prepared sauce
- 9Stir-fry until sauce thickens and coats the chicken
- 10Serve hot, garnished with green onions and Thai basil, typically with rice
