Ingredients
  • 1 pound (450g) chicken thighs, sliced
  • 1.5 tbsp fish sauce
  • 1.5 tsp granulated sugar (for marinade)
  • 2.5 tbsp oyster sauce
  • 2.5 tbsp Golden Mountain Seasoning Sauce or soy sauce
  • 1.5 tsp granulated sugar (for sauce)
  • 2.5 tbsp water
  • 1/3 cup minced garlic
  • 2.5 tbsp crushed dried chili flakes
  • 2.5 tbsp neutral cooking oil
  • Green onions for garnish
  • Thai basil for garnish
Method
  1. 1Trim and slice chicken thighs into 1/2-inch pieces
  2. 2Marinate chicken with fish sauce and sugar
  3. 3Mix oyster sauce, seasoning sauce (or soy sauce), sugar, and water for the sauce
  4. 4Grind dried chili flakes to a finer consistency
  5. 5Heat oil in a wok or pan over high heat
  6. 6Sear chicken until browned on both sides, then remove from pan
  7. 7Sauté minced garlic and ground chili flakes until fragrant
  8. 8Return chicken to the pan, add prepared sauce
  9. 9Stir-fry until sauce thickens and coats the chicken
  10. 10Serve hot, garnished with green onions and Thai basil, typically with rice
