  • 570g (approx 1.25 lbs) chicken breast, sliced
  • 1 cup fresh parsley, chopped
  • 1 small white onion, quartered
  • 4 cloves garlic, peeled
  • 1/2 cup Toum (garlic dip)
  • 1/2 cup Lebanese-style pickles
  • 6 large pita breads
Method
  1. 1Add sliced chicken breast, chopped parsley, quartered onion, and peeled garlic cloves to a food processor.
  2. 2Blend the ingredients until a coarse, ground mixture is formed.
  3. 3Using an ice cream scoop, portion the ground kafta mixture onto a piece of clear plastic wrap.
  4. 4Use the plastic wrap to roll and shape the mixture into small, elongated log-like forms.
  5. 5Place the raw kafta logs onto a hot grill pan and cook until golden brown with grill marks on all sides.
  6. 6Lay a piece of pita bread flat on a plate and spread a generous amount of toum across it.
  7. 7Place two cooked chicken kafta logs and several Lebanese-style pickles on top of the toum.
  8. 8Carefully roll up the pita bread to form a wrap or sandwich.
