- 3Using an ice cream scoop, portion the ground kafta mixture onto a piece of clear plastic wrap.
- 4Use the plastic wrap to roll and shape the mixture into small, elongated log-like forms.
- 5Place the raw kafta logs onto a hot grill pan and cook until golden brown with grill marks on all sides.
- 6Lay a piece of pita bread flat on a plate and spread a generous amount of toum across it.
- 7Place two cooked chicken kafta logs and several Lebanese-style pickles on top of the toum.
- 8Carefully roll up the pita bread to form a wrap or sandwich.
