Ingredients
- 2 pounds yellow potatoes, thinly sliced
- ½ medium onion, thinly sliced
- 2 tablespoons butter
- 3 tbsp all-purpose flour
- 2 cups white milk
- 1/4 cup fresh cream
- 1/2 cup shredded yellow cheddar cheese, plus more for layering and topping
- Salt to taste
- Black pepper to taste
- Fresh oregano leaves
- Chopped fresh parsley for garnish
Method
- 1Peel and thinly slice the potatoes, then chop the onion.
- 2Melt butter in a pan, add flour to form a roux, stirring continuously over low heat.
- 3Slowly add milk to the roux, stirring until smooth, then mix in fresh cream, cheese, salt, black pepper, and fresh oregano, cooking until the sauce thickens.
- 4Grease a baking dish with butter.
- 5Layer thinly sliced potatoes, chopped onions, shredded cheddar cheese, and béchamel sauce, repeating these layers.
- 6Top the final layer with béchamel sauce and a generous amount of shredded cheddar cheese.
- 7Cover the dish with aluminum foil and bake at 180C for 30 minutes.
- 8Remove the foil and bake for an additional 10 minutes until golden brown and bubbly.
- 9Garnish with chopped fresh parsley before serving.
