Ingredients
  • 2 pounds yellow potatoes, thinly sliced
  • ½ medium onion, thinly sliced
  • 2 tablespoons butter
  • 3 tbsp all-purpose flour
  • 2 cups white milk
  • 1/4 cup fresh cream
  • 1/2 cup shredded yellow cheddar cheese, plus more for layering and topping
  • Salt to taste
  • Black pepper to taste
  • Fresh oregano leaves
  • Chopped fresh parsley for garnish
Method
  1. 1Peel and thinly slice the potatoes, then chop the onion.
  2. 2Melt butter in a pan, add flour to form a roux, stirring continuously over low heat.
  3. 3Slowly add milk to the roux, stirring until smooth, then mix in fresh cream, cheese, salt, black pepper, and fresh oregano, cooking until the sauce thickens.
  4. 4Grease a baking dish with butter.
  5. 5Layer thinly sliced potatoes, chopped onions, shredded cheddar cheese, and béchamel sauce, repeating these layers.
  6. 6Top the final layer with béchamel sauce and a generous amount of shredded cheddar cheese.
  7. 7Cover the dish with aluminum foil and bake at 180C for 30 minutes.
  8. 8Remove the foil and bake for an additional 10 minutes until golden brown and bubbly.
  9. 9Garnish with chopped fresh parsley before serving.
