  • 4 medium potatoes
  • 1 tsp salt (for boiling)

  • 100g mozzarella cheese (block)

Method
  1. 1Peel and chop 4 medium potatoes into large chunks.
  2. 2Boil potato chunks in heavily salted water until fork-tender, then drain thoroughly.
  3. 3Transfer drained potatoes to a mixing bowl and mash until smooth.
  4. 4Season mashed potatoes with salt and 2 tbsp cornstarch, then knead to form a compact log.
  5. 5Slice the potato log into six equal portions.
  6. 6Flatten each portion into a disc, place a piece of mozzarella cheese in the center, and seal to form a round patty.
  7. 7Heat 1/2 cup cooking oil in a frying pan over medium heat.
  8. 8Shallow fry potato patties until golden-brown and crispy on all sides.
  9. 9While patties cook, combine 1/4 cup mayonnaise, zest of 1/2 lemon, and a pinch of salt in a small bowl.
