Ingredients
- 4 medium potatoes
- 1 tsp salt (for boiling)

- 100g mozzarella cheese (block)

Method
- 1Peel and chop 4 medium potatoes into large chunks.
- 2Boil potato chunks in heavily salted water until fork-tender, then drain thoroughly.
- 3Transfer drained potatoes to a mixing bowl and mash until smooth.
- 4Season mashed potatoes with salt and 2 tbsp cornstarch, then knead to form a compact log.
- 5Slice the potato log into six equal portions.
- 6Flatten each portion into a disc, place a piece of mozzarella cheese in the center, and seal to form a round patty.
- 7Heat 1/2 cup cooking oil in a frying pan over medium heat.
- 8Shallow fry potato patties until golden-brown and crispy on all sides.
- 9While patties cook, combine 1/4 cup mayonnaise, zest of 1/2 lemon, and a pinch of salt in a small bowl.
- 10Whisk the dipping sauce until smooth and serve with hot potato bites.
