Ingredients
  • 1 tsp butter
  • 250g mushrooms, diced
  • ¼ tsp turmeric
  • ½ tsp red chilli powder
  • ½ tsp black pepper
  • Salt to taste
  • 8–10 green chillies, slit
  • 3 cheese slices
  • ½ cup water
  • Spring onion greens to finish
  • Protein toast to serve
Method
  1. 1Heat butter in a non-stick pan.
  2. 2Add diced mushrooms and toss for 2 minutes on high heat.
  3. 3Add turmeric powder, red chilli powder, black pepper, and salt.
  4. 4Cook the mushrooms and spices for 2-3 minutes until golden.
  5. 5Add slit green chillies and toss for 1 minute.
  6. 6Cover the mixture with cheese slices.
  7. 7Pour water over the cheese slices.
  8. 8Cover the pan with a lid and simmer for 1 minute, allowing the cheese to melt.
  9. 9Stir the mixture until the sauce is glossy and coats the mushrooms and peppers.
  10. 10Finish by sprinkling with spring onion greens.
  11. 11Spoon the mushroom mixture over protein toast to serve.
