Ingredients
- 1 tsp butter
- 250g mushrooms, diced
- ¼ tsp turmeric
- ½ tsp red chilli powder
- ½ tsp black pepper
- Salt to taste
- 8–10 green chillies, slit
- 3 cheese slices
- ½ cup water
- Spring onion greens to finish
- Protein toast to serve
Method
- 1Heat butter in a non-stick pan.
- 2Add diced mushrooms and toss for 2 minutes on high heat.
- 3Add turmeric powder, red chilli powder, black pepper, and salt.
- 4Cook the mushrooms and spices for 2-3 minutes until golden.
- 5Add slit green chillies and toss for 1 minute.
- 6Cover the mixture with cheese slices.
- 7Pour water over the cheese slices.
- 8Cover the pan with a lid and simmer for 1 minute, allowing the cheese to melt.
- 9Stir the mixture until the sauce is glossy and coats the mushrooms and peppers.
- 10Finish by sprinkling with spring onion greens.
- 11Spoon the mushroom mixture over protein toast to serve.
